Debra Loaded Cauliflower and Chicken Casserole

<article> <section> <p>Nothing beats a loaded cauliflower casserole filled with tasty ingredients! Debbie loves making this with her family and tweaking it to her liking. This version is packed with cheese, green onions and lots of bacon, but you can add any of your favorite toppings, too.</p> <div class="sub-head">Debra Loaded Cauliflower and Chicken Casserole</div> <p><b>Prep Time: 15 minutes | Cook Time: 35 minutes | Serves: 8</b></p> <div class="sub-head">Ingredients:</div> <p><ul> <li>1 large head of cauliflower, cut up (can use package of frozen cauliflower florets, around 2 lbs.)</li> <li>1 pound of chicken, cooked and cut up or rotisserie chicken (I use 1/2 of rotisserie chicken for meal with my husband and then debone the other half and add into the casserole)</li> <li>8 ounces extra sharp cheddar cheese, shredded and divided</li> <li>8 ounces Monterey Jack cheese, shredded and divided </li> <li>8 ounces cream cheese, softened</li> <li>4 tablespoons heavy cream </li> <li>1 cup green onions, chopped (about 1 bundle)</li> <li>9 slices bacon cooked and crumbled, divided (crumble 6 and then crumble 3)</li> <li>1 clove of minced garlic </li> <li>salt and pepper to taste </li> </ul></p> <div class="sub-head">Instructions:</div> <p><ol> <li>Preheat oven to 350℉. </li> <li>Boil cut up head of cauliflower until tender about 10 minutes or can steam frozen cauliflower florets until tender about 5 minutes. </li> <li>While cauliflower is cooking, cream together 6 ounces of the extra sharp cheddar cheese, 6 ounces of the Monterey Jack cheese, cream cheese, and heavy cream. </li> <li>Stir in the chopped green onions, 6 of the crumbled bacon, minced garlic, and cooked, cut up chicken. Once all is blending together, set aside.</li> <li>Drain any liquid from the cauliflower. </li> <li>Add cauliflower to cheese and chicken mixture. Stir cauliflower and cheese and chicken mixture together. </li> <li>Pour into a 2-3 quart casserole dish that has been prepared with cooking spray. Sprinkle on top the remaining extra sharp cheddar cheese and Monterey Jack cheese and the 3 slices of crumbled bacon. </li> <li>Cover dish with foil and bake for 25 minutes, remove foil and continue to bake until the cheese is browned and bubbly. </li> <li>Enjoy.</li> </ol></p> </section> </article>
