This low carb Chicken Fajita Soup has all the flavors of sizzling fajitas, and is the perfect recipe for those days where you're short on time, but still want a delicious home cooked meal. Start this soup in them morning, and come home to a hearty protein packed soup that is perfect for the whole family!</p> <h2>Tomatoes and the benefits they deliver…</h2> <p align="justify">Despite technically being a fruit, the tomato is generally categorized as a vegetable. Tomatoes are the major dietary source of the antioxidant lycopene, which has been linked to many health benefits, including reduced risk of heart disease and cancer. They contain beta-carotene, which is an antioxidant which converts into vitamin A, naringenin which is found in tomato skin, this flavonoid has been shown to decrease inflammation and protect against various diseases in mice and chlorogenic acid which is another antioxidant which may lower blood pressure. Additionally tomatoes are a great source of vitamin C, potassium, folate and vitamin K. </p> <h2>Bell Peppers are Superfoods ?...</h2> <p align="justify">Did you know that green peppers are just unripe red peppers? Because they are not fully mature, they have a bitter after taste, and half the vitamin C and 1/10th the vitamin A compared to their red or orange siblings. Vitamin A is important for eye health, and over 200% of your daily vitamin C intake! Bell peppers are very nutritious also containing B6, folate which help prevent anemia, packed with antioxidants including lycopene which has been linked to help prevent many cancers.
