They contain beta-carotene, which is an antioxidant which converts into vitamin A, naringenin which is found in tomato skin, this flavonoid has been shown to decrease inflammation and protect against various diseases in mice and chlorogenic acid which is another antioxidant which may lower blood pressure. Additionally tomatoes are a great source of vitamin C, potassium, folate and vitamin K.

Bell Peppers are Superfoods ?...

Did you know that green peppers are just unripe red peppers? Because they are not fully mature, they have a bitter after taste, and half the vitamin C and 1/10th the vitamin A compared to their red or orange siblings. Vitamin A is important for eye health, and over 200% of your daily vitamin C intake! Bell peppers are very nutritious also containing B6, folate which help prevent anemia, packed with antioxidants including lycopene which has been linked to help prevent many cancers. They even have a mild thermogenic action that increases our metabolism without increasing our heart rate and blood pressure like hot peppers do.

Keto Crock Pot Chicken Fajita Soup

Prep Time: 10 minutes Cooking Time: 6 Hours Serves: 8

Ingredients:

2 pounds boneless skinless chicken breasts

2 cans of diced tomatoes

2 cups of chicken broth

2 tablespoons of taco seasoning

2 teaspoons garlic

1/2 cup of onion

1 green bell pepper

1 red bell pepper

Instructions:

Chop bell pepper, onion and garlic.

Combine all the ingredients in the crockpot.

Cook on low for 6-8 hours.

Shred and chop the chicken.

Stir to combine the flavors.
