* 1 pound ground bison
* 1 teaspoon avocado oil
* 2 tablespoons taco seasoning
* 8 ounces romaine lettuce
* 1 ⅓ cup tomatoes
* ¾ cup cheddar cheese
* 1 large avocado
* ½ cup scallions
* ⅓ cup salsa
* ⅓ cup sour cream

1. Heat oil in a skillet over medium-high heat and add ground bison.
2. Sautee, for about 8 minutes until the beef is browned and no longer pink.
3. Stir taco seasoning into the ground bison until well combined. Break up any large pieces of meat and remove from heat.
4. Chop lettuce, tomatoes, avocado, and scallions.
5. In a large bowl combine all remaining ingredients and stir until thoroughly combined.
6. Add the ground bison to the mixture and stir until well coated.
