<p>On top of being unhealthy, pre-packaged meals are almost impossible to find if you are trying to follow a low-carb, or ketogenic diet. </p>
<p>So what can you do…...? Get creative! </p>
<p>One solution is to make your own backpacking meals. You will be shocked at how easy it can be to make flavor packed meals that meet your macros. </p>
<p>Whether it’s lunchtime at the summit, or dinner around the campfire, this flavor packed curry chicken will give you the fuel you need to power through any day of backpacking. </p>

<h2 itemprop="name">CURRY CHICKEN BACKPACKING MEAL</h2>

<h3>Ingredients:</h3>

<li itemprop="recipeIngredient">1 12oz package of cauliflower rice</li>
<li itemprop="recipeIngredient">1 chicken breast</li>
<li itemprop="recipeIngredient">½ can of coconut milk</li>
<li itemprop="recipeIngredient">1 tablespoon red curry paste</li>
<li itemprop="recipeIngredient">Chopped cilantro (optional)</li>
<li itemprop="recipeIngredient">Salt to taste</li>

<h3>Instructions:</h3>
<ol itemprop="recipeInstructions">
<li>Using a butcher knife, thinly slice chicken breast lengthwise to about ¼ of an inch. Rotate strips and slice in the opposite direction creating tiny cubes. </li>
<li>Heat a skillet over medium-high heat (do not add oil to the pan). Place chicken cubes and stir frequently to ensure they are cooked through. Drain any excess liquid. </li>
<li>Add remaining ingredients to the skillet and cook until cauliflower rice is tender and liquid has reduced. </li>
<li>Remove from heat and allow to cool completely. </li>
<li>To dehydrate spoon curry mixture onto solid plastic dehydrating trays. Be sure the mixture is spread evenly across the tray to ensure proper dehydration.</li>
<li>Turn the dehydrator on to high and dehydrate for 18 hours. Check periodically.</li>
<li>Once dehydrated place in an airtight container or seal in a vacuum sealed pouch.</li>
