Either you can’t stand it, or you can’t get enough of it! The characteristic blue veins in this family of pungent cheeses come from the edible Penicillium mold. The process of making blue cheese involves injecting the mold right into it. And yes, that’s the same mold responsible for the antibiotic penicillin! Besides giving blue cheese its tang, the mold also helps support your immune system by improving your gut flora. Plus, blue cheese is high in phosphorus, which is crucial for healthy teeth and bones.</p> <h2>What’s the Deal with Worcestershire?</h2> <p align="justify">Worcestershire sauce is a staple in the UK and many American kitchens, known for its tangy, umami funk. But what the heck is it? Inspired by an Indian fermented sauce, and perhaps by the ancient Roman garum fish sauce, Worcestershire has been around since 1837. The recipe was perfected in that year by two chemists, John Lea and William Perrins—yes, that Lea & Perrins. The company still produces the classic sauce today according to the original recipe! Though the exact formula is a secret, two major components are: fermented anchovies and tamarind extract. Beyond lending a funky flavor, the anchovies help support gut health with omega-3s and probiotics. Tamarind, a sour tropical pod, is great for digestive support.
